Miso Glaze

Ingredients

  • 500ml dashi
  • 250g miso
  • 60g demerara sugar
  • 230g egg yolks

Method

  1. Whisk yolks and sugar in a bowl till pale yellow
  2. Bring kombu dashi powder, miso and water to the boil
  3. Add liquid to eggs and cook to 85C
